When you use skim milk, it's more likely to separate; the roux needs fat to keep everything emulsified.

Ingredients:
- 2 tablespoons - butter
- 2 tablespoons - flour
- 1 1/2 teaspoons - garlic powder
- 1 teaspoons - prepared mustard
- 1 1/4 cups - milk at least 2%
- 8 ounces - cottage cheese or ricotta
- 8 ounces - Swiss cheese, shredded
Directions:
In medium saucepan, melt butter; blend in flour and garlic powder, then mustard. Add milk all at once. Cook quickly, stirring constantly, till thickened and bubbly. Add cottage cheese. Beat smooth with electric mixer or in blender.
Over medium heat, gradually add Swiss cheese, stirring until cheese is melted. Pour into fondue pot; place over fondue burner. Makes 4–6 servings.
Suggested dippers: French bread, fresh vegetables, Granny Smith apples.
