Feel free to sub pastrami, deli roast beef, cooked brisket or sliced turkey for variation. Muenster and mozzarella also make good substitutes for the Swiss cheese.

Ingredients:
- 2 tablespoons - butter
- 2/3 pounds - corned beef
- 9 ounces - sauerkraut drained
- 1 tablespoons - Dijon mustard
- 1/2 cups - mayonnaise
- 4 ounces - Swiss cheese
- 1 - dill pickle
Directions:
Heat butter in skillet over medium-low heat.
Add corned beef, frying carefully. Squeeze as much liquid as possible out of the sauerkraut, and distribute the kraut evenly in the pan.
Place mustard in small dollops here and there in the sauerkraut; add sliced cheese and heat until cheese melts. (Covering skillet with a lid will speed up this process).
Serve with mayonnaise, dill pickle and a little more mustard, as desired.
