I serve this with mashed potatoes. But you can peel baby potatoes and include them with the carrots and celery halfway through the crock pot cooking. Or, you can boil baby red potatoes in water on the stove. I also serve this with rye bread.

Ingredients:
- 1 - Corned Beef - Low Sodium I try to find a low sodium corned beef. The regular ones are very salty.
- 1 heads - Green Cabbage
- 2 - Carrots, peeled and cut into large pieces
- 2 - Celery Stalks, cut into large pieces
- 1 - Onion - small to medium, cut into large pieces
- 4 cups - Water
- 1 - Corned Beef Seasoning Pack (sold and packaged with the Corned Beef)
Directions:
Rinse the corned beef in water. Pat dry. Remove most of the fat layer with a knife and discard.
Clean and prepare 2 carrots, 2 celery sticks, 2 small/medium onion. Cut each of them into big chunks.
Place the chunks of carrots, celery, and onion pieces in the crock pot. Then place the corned beef in the crockpot. Sprinkle the seasoning packet that came with the corned beef over the beef. Pour 3 cups of water into the bottom of the crock pot. Cook on low for 8 hours.
45 minutes before you plan to eat, cut the cabbage into slices/chunks. Drain the liquid from the crockpot into a large skillet. Place the slices of cabbage into the skillet. Add more water (about another cup). Bring cabbage to a boil. Cover and simmer for 40 - 45 minutes til cabbage is tender.
Serve corned beef with carrots, onions, celery and cabbage. If you like your vegetables firmer, add the carrots, onions, and celery half way through cooking in crockpot.
