    Alternative: Bake it in a deep glass dish instead. 250 degrees, use ground seasonings instead of whole. Bake uncovered for 3 hours. Add potatoes to rack and carrots to glass dish, spoon juice over them and bake 45 minutes covered. Add cabbage to glass dish, spoon juice over it and bake 30 minutes covered. Otherwise, potatoes and veggies can be boiled separately with whole seasonings as above.

Ingredients:

  1. 1/2 teaspoons - whole cloves
  2. 1 teaspoons - whole black pepper
  3. 1/4 teaspoons - red chili flakes
  4. 1/2 teaspoons - cardamom optional
  5. 1/2 teaspoons - mace optional
  6. 1/2 teaspoons - cinnamon optional
  7. 1/4 teaspoons - crystalized or fresh ginger optional
  8. 5 pounds - Flat Cut Corned Beef Brisket
  9. 1 - medium onion sliced
  10. 12 - small to medium red potatoes
  11. 8 - whole carrots (1lb) peeled
  12. 1 heads - green cabbage cut in 8 pieces
  13. 3 quarts - water
  14. 1/2 teaspoons - crushed bay leaf
  15. 1/2 teaspoons - whole mustard seed
  16. 1/2 teaspoons - whole coriander

Directions:

Use a very large stock pot. As you add ingredients you will need the room. Put all seasonings in a cheesecloth or tea egg. Place in water and bring to a boil. Add the Brisket and reduce heat to strong simmer with cover tilted for 2.5 hours. Add the whole potatoes and carrots and simmer for 30 minutes. Add the cabbage cut in 8ths for an additional 15 minutes. remove all, reserve some juice to put over potatoes and vegetables as gravy.
