Ingredients:
- 2 cups - all-purpose flour
- 6 cups - corn meal
- 1 1/2 cups - dry milk
- 1 teaspoons - sugar optional
- 1/4 cups - baking powder
- 1 tablespoons - salt
- 1 1/2 cups - shortening
- 2 1/4 cups - cornbread mix (above)
- 1 - egg beaten
- 2/3 cups - water
- 2 cups - cornbread mix (above)
- 1/2 cups - water
Directions:
For Cornbread Mix:
Sift all dry ingredients together; blend shortening into dry mix with pastry blender or with knives. Store in airtight container until ready to use.
To make Cornbread:
Mix together cornbread mix, beaten egg, and water. Bake in an 8-x-8-inch pan at 425 degrees F for 20 minutes.
For Drop Cornbread Biscuits:
Combine cornbread mix and water. Drop onto cookie sheet and bake at 350 degrees F for 15 minutes.
Cornbread Variations: To any of the cornbread recipes, add 1 teaspoon poultry seasoning, OR 1 teaspoon chili powder, OR 1/2 cup crumbled bacon, OR 1/2 cup diced ham and minced onion.
