Cornbread Mix, Cornbread, and Drop Cornbread Biscuits

Ingredients:

  1. 2 cups - all-purpose flour
  2. 6 cups - corn meal
  3. 1 1/2 cups - dry milk
  4. 1 teaspoons - sugar optional
  5. 1/4 cups - baking powder
  6. 1 tablespoons - salt
  7. 1 1/2 cups - shortening
  8. 2 1/4 cups - cornbread mix (above)
  9. 1 - egg beaten
  10. 2/3 cups - water
  11. 2 cups - cornbread mix (above)
  12. 1/2 cups - water

Directions:

For Cornbread Mix:
Sift all dry ingredients together; blend shortening into dry mix with pastry blender or with knives. Store in airtight container until ready to use.

To make Cornbread:
Mix together cornbread mix, beaten egg, and water. Bake in an 8-x-8-inch pan at 425 degrees F for 20 minutes.

For Drop Cornbread Biscuits:
Combine cornbread mix and water. Drop onto cookie sheet and bake at 350 degrees F for 15 minutes.

Cornbread Variations: To any of the cornbread recipes, add 1 teaspoon poultry seasoning, OR 1 teaspoon chili powder, OR 1/2 cup crumbled bacon, OR 1/2 cup diced ham and minced onion.
