Ingredients:
- 4 ears - Fresh Corn
- 3 tablespoons - Red Onion diced
- 1/2 - Jalapeno seeded and minced
- 1/4 cups - Cilantro coarsely chopped
- 2 tablespoons - Roasted Red Bell Pepper finely diced
- 1/4 cups - Fresh Lime Juice
- 2 tablespoons - Olive Oil
- - Salt to taste
- - Black Pepper to taste
Directions:
Roast the corn: Preheat oven to 350 degrees. Remove all but one layer of husk from 4 ears fresh corn. Pull back remaining husk to remove the silk. Dip each ear in water to moisten. Re-cover kernels with husk, set corn on a baking sheet and roast for 45 minutes. Cut corn off cobs and reserve.
To the corn, add red onion, jalapeño, cilantro, roasted red bell pepper, lime juice, olive oil, and salt and freshly ground black pepper, to taste.
