Corn Pudding

Ingredients:

  1. 2 tablespoons - Butter
  2. 1 - Medium onion Chopped
  3. 1 cups - Dairy sour cream
  4. 2 cups - Cream-style corn
  5. 3 - Eggs Beaten
  6. 1 packages - 6-oz. pkg. Pioneer Brand corn muffin mix
  7. 2 cups - Cheddar cheese Shredded

Directions:

1. Heat oven to 350. Grease a 13X9-in. baking dish; set aside
2. Melt butter in a heavy-bottomed 10-in. skillet over medium heat. Add onion ad saute until it is wilted and transparent, about 5 minutes. Do not allow it to brown. Remove from heat and blend onions and sour cream in a bowl; mixing well; set aside.
3. In a separate large bowl, combine creamed corn, eggs and muffin mix. Turn out into the prepared baking dish. Spoon the onion mixture evenly around the baking dish in dollops.
4. Scatter the shredded cheese over the top and bake until a wooden pick inserted in the center comes out clean, about 45 minutes.
5. Cut into squares and serve hot.
