Corn Cake

Ingredients:

  1. 1/2 cups - butter softened
  2. 1/3 cups - masa
  3. 1/4 cups - water
  4. 1 1/2 cups - thawed corn
  5. 1/4 cups - cornmeal
  6. 1/3 cups - sugar
  7. 2 tablespoons - heavy whipping cream
  8. 1/4 teaspoons - salt
  9. 1/2 teaspoons - baking powder

Directions:

Beat butter until creamy. Add masa and water; mix well.

Process corn, but leave chunky. Stir into butter mixture.

In a separate bowl, mix together the sugar, cornmeal, cream, salt and baking powder. Add to the corn flour mixture and combine.

Pour into an ungreased 8x8-inch baking pan. Cover with aluminum foil. Place pan into a 9x13-inch baking dish filled 1/3 of the way with water.

Bake at 350 degrees F for 50-60 minutes; cool for 10 minutes.
