Collagen Packed Blueberry Gummies

Ingredients:

  1. 1 cups - blueberries (frozen wild blueberries work well)
  2. 1/2 cups - lemon juice from about 4 lemons
  3. 1/2 cups - coconut manna OR raw coconut spread e.g. Nature's Way or Nutiva brands
  4. 2 tablespoons - maple syrup optional, for sweetness
  5. 4 tablespoons - beef gelatin, e.g. Great Lakes brand

Directions:

1. In a small saucepan over low heat, bring first four ingredients to a gentle boil.

2. Take off the heat and stir until the coconut is melted and well combined.

3. Put the warm blueberry mixture into a blender and add the gelatin powder. Process until completely smooth (will be fairly thick).

4. Pour the mixture into a glass dish (8-x-8-inches) lined on the bottom with parchment paper.

5. Refrigerate for 2 hours.

6. When seat, gently tease out the contents onto a chopping board and cut into bite-sized pieces.

7. Store in the refrigerator for up to 5 days.
