Ingredients:
- 1 - whole salmon cleaned, with head and tail left on
- 1/4 cups - chopped parsley
- - salt and pepper
- 6 sprigs - thyme (OR 1 tsp. dried thyme)
- 1 - medium onion thinly sliced
- 1 - lemon thinly sliced
- 1 tablespoons - olive oil
- 2 - egg yolks
- 2 tablespoons - Dijon mustard
- - fresh ground pepper
- 3/4 cups - olive oil
- 3/4 cups - vegetable oil
- 2 tablespoons - minced parsley
- 2 tablespoons - minced fresh chives
- 1 tablespoons - lemon juice
Directions:
For Herb Mayonnaise:
In processor, combine egg yolks, mustard, salt and pepper. Gradually add both oils, slowly, until thick and smooth. Stir in parsley, chives and lemon juice. Refrigerate until ready to serve. Yields 1-1/2 cups.
For Salmon:
Rinse and wipe salmon; pat dry inside and out. Sprinkle inside with salt and pepper and stuff with half of the lemon and onion along with all of the parsley.
Place salmon on aluminum foil; rub with olive oil and sprinkle with salt and pepper and thyme; top with remaining onion and lemon.
Cover tightly and bake at 370 degrees F for 40 minutes. Remove and let cool in foil. Serve at room temperature with herb mayonnaise.
