Coconut Cream Stuffed Peaches

Ingredients:

  1. 4 cups - Water
  2. 1/2 cups - Granulated sugar
  3. 1 whole - Cinnamon Stick
  4. 4 whole - Peaches Whole
  5. 4 ounces - Cream cheese softened
  6. 2 tablespoons - Liquid Honey
  7. 1/2 teaspoons - Grated Lime grind
  8. 3 tablespoons - Toasted shredded coconut

Directions:

- In large saucepan, bring water, sugar, cinnamon stick to a boil, stirring to dissolve sugar.
- Add peaches, cut side down, add extra water if needed to cover fruit.
- Press piece of waxed paper against surgace, cover and simmer for 10 to 12 minutes until tender
- Remove pan from heat and let stand to cool. Drain and peel peaches
- Arrange halves cut side up in dish.
- Combine cheese, honey and lime rind, mix well.
- Stir in 2 tbs of the coconut.
- Divide among peaches, mounding in centres.
- Sprinkle with remaining coconut. Chill until set, about 2 1/2 hours.
