Ingredients:
- 3 cups - lime juice
- 6 cups - gin
- 6 cups - Jarritos grapefruit soda
- - a few lime slices
- - mint sprigs
- - fleur de sel for rims of glasses
- - lime wedges for garnish
- - candied grapefruit peel recipe below
- - mint leaves for garnish
- 1 cups - grapefruit peel cut in 1x2-inch lengths
- 1 1/2 cups - sugar
- 1 - bay leaf fresh, if possible
- 1 sprigs - fresh thyme
- 1 - inch of fresh ginger peeled, cut in thin strips
Directions:
In a pitcher, stir together lime juice, gin, grapefruit soda, plus a few lime slices and mint sprigs.
Serve in glasses half-rimmed with fleur de sel and filled with ice; garnish with a lime wedge, a few mint leaves, and two or three pices of candied grapefruit peel.
Candied Grapefruit Peel: In a small saucepan cover peel with water by 1 inch. Bring to boiling; drain. Repeat process, blanching peel a total of four times to remove bitterness from peel.
In a clean saucepan combine sugar, bay leaf, thyme, ginger, and 2 cups cold water. Bring to boiling. Reduce to simmering. Add peel. Cook slowly 90 minutes.
Remove from heat. Cool completely. Transfer to a clean jar. Chill up to 2 weeks. Makes 24 servings.
