Ingredients:

  1. 4 strips - Bacon Diced
  2. 1 ounces - Medium Yellow Onion Diced
  3. 3 stalks - Celery Diced
  4. 4 cloves - Garlic Chopped
  5. 2 pounds - Bison
  6. 1 pounds - Grass Fed Ground Sirloin
  7. 3 teaspoons - Round Cumin
  8. 4 teaspoons - Chili Powder
  9. 1 teaspoons - Paprika
  10. 1 teaspoons - Dried Oregano
  11. 1 teaspoons - Thyme
  12. 1 cans - 14-28oz Fire Roasted Tomatoes Include Liquid
  13. 1 cans - Crushed Tomatoes
  14. 3 sticks - Carrots Peeled and diced
  15. 1 cups - Mild Salsa
  16. 1 jars - Tomato Paste 8oz
  17. 1 tablespoons - Unsweetened Cocoa Powder
  18. 1 cans - Mild Green Chilies 7oz
  19. 1 tablespoons - Apple Cider Vinegar
  20. pinchs - Salt and Pepper to Taste

Directions:

In a large saucepan cook bacon until it is slightly brown and some fat is rendered out. Add onion and celery, cook about 3-4 minutes or to translucent. Add garlic and cook a little longer. Add bison and beef, cook until no pink remains. Add spices, tomatoes, carrots, salsa, green chilies, tomato paste. Cover and simmer on low for one hour, stirring every 20 minutes. You'll want to keep it simmering, but don't let it stick to the bottom of the pan. After 1 hour add cocoa and apple cider vinegar. Cook uncovered for an additional 20 minutes. Add salt and pepper to taste.
