Notes:
You can top the individual servings with thin slices of avocado. Other options you can add are diced bell pepper, or to add more heat, add hot pepper sauce.

Ingredients:
- 4 strips - Bacon Diced
- 1 ounces - Medium Yellow Onion Diced
- 3 stalks - Celery Diced
- 4 cloves - Garlic Chopped
- 2 pounds - Bison
- 1 pounds - Grass Fed Ground Sirloin
- 3 teaspoons - Round Cumin
- 4 teaspoons - Chili Powder
- 1 teaspoons - Paprika
- 1 teaspoons - Dried Oregano
- 1 teaspoons - Thyme
- 1 cans - 14-28oz Fire Roasted Tomatoes Include Liquid
- 1 cans - Crushed Tomatoes
- 3 sticks - Carrots Peeled and diced
- 1 cups - Mild Salsa
- 1 jars - Tomato Paste 8oz
- 1 tablespoons - Unsweetened Cocoa Powder
- 1 cans - Mild Green Chilies 7oz
- 1 tablespoons - Apple Cider Vinegar
- pinchs - Salt and Pepper to Taste
Directions:
In a large saucepan cook bacon until it is slightly brown and some fat is rendered out. Add onion and celery, cook about 3-4 minutes or to translucent. Add garlic and cook a little longer. Add bison and beef, cook until no pink remains. Add spices, tomatoes, carrots, salsa, green chilies, tomato paste. Cover and simmer on low for one hour, stirring every 20 minutes. You'll want to keep it simmering, but don't let it stick to the bottom of the pan. After 1 hour add cocoa and apple cider vinegar. Cook uncovered for an additional 20 minutes. Add salt and pepper to taste.
