Cleansing Corn Chowder

Ingredients:

  1. 4 cups - corn off the cob about 4 to 5 large ears
  2. 2 cups - almond milk
  3. 1 - avocado
  4. 1 teaspoons - cumin
  5. 2 teaspoons - finely minced onion
  6. - Celtic sea salt and freshly ground black pepper to taste
  7. 1/4 cups - alfalfa sprouts optional
  8. 1/4 cups - diced red bell pepper optional

Directions:

Setting aside about 1/4 cup of corn, sprouts and bell pepper, blend the rest of the ingredients together in a mixing bowl. Plate the mixture and top with a sprinkling of reserved corn kernels, sprouts and/or diced red pepper bits as desired.

If you prefer, you can make your own almond milk by blending 1 cup of almonds with 3 cups of water in a blender and straining the mixture through a cheesecloth or very fine sieve to separate the liquid from the pulp, which you'll discard.
