Ingredients:
- 8 - lamb chops (4 oz. each), frenched
 - 2 tablespoons - soy sauce
 - 2 tablespoons - sugar
 - 2 tablespoons - hoison sauce (sweet-spicy soybean-garlic sauce)
 - 2 tablespoons - canola oil
 - 1 tablespoons - minced garlic
 - 1 tablespoons - minced fresh ginger
 - 1 tablespoons - cilantro
 - 1 tablespoons - minced fresh basil
 - 1/2 teaspoons - red chili pepper flakes
 - - salt and pepper to taste
 - 16 ounces - peeled, seeded, diced papaya
 - 16 ounces - peeled, cored, diced pineapple
 - 1/4 cups - granulated white sugar (4 -5 oz.) or a little more, to taste
 - 4 1/2 teaspoons - salt (1 oz.)
 
Directions:
Combine marinade ingredients and rub mixture into lamb. Marinate 4 to 6 hours in refrigerator, turning lamb occasionally.
Broil lamb chops to desired doneness. Serve 2 lamb chops per portion with Pineapple Papaya Marmalade.
While chops are cooking, combine pineapple, sugar and salt in a heavy saucepan. Simmer for 10 minutes, stirring occasionally. Add papaya and simmer for 5 minutes.
