Classic Cheesecake

Ingredients:

  1. 8 - graham crackers 2-x-4-inches each, about 1 cup crushed crumbs
  2. 1/4 cups - butter
  3. 1 tablespoons - sugar
  4. 2 packages - 8 oz. cream cheese softened
  5. 1/2 cups - sugar
  6. 1/4 cups - all-purpose flour
  7. 3 - eggs
  8. 1 cups - sour cream
  9. 1 teaspoons - vanilla

Directions:

Preheat oven to 350 degrees F. Place graham crackers in a large self-sealing plastic bag; crush into fine crumbs.

Place butter in small bowl and microwave on High for 30-45 seconds or until melted. Add sugar and graham cracker crumbs; mix well.

Press mixture into bottom of springform pan fitted with flat bottom; bake 10 minutes. Remove from oven and place on cooling rack.

Meanwhile, place cream cheese in large mixing bowl. Mix with whisk or beaters until soft and creamy; mix in sugar and flour until well-combined. Add eggs and sour cream; whisk or mix until smooth.

Pour batter over slightly cooled crust. Bake for 50-55 minutes until center is just set. Remove from oven. Cool 20 minutes on cooling rack. Carefully run sharp knife around edges of cheesecake.

Allow to cool to room temperature; cover with foil and refrigerate until thoroughly chilled. Release side clamp and remove collar of pan. Top with fresh sliced strawberries or cherry pie filling.
