    Dawn, here's my recipe for apple cake. I don't have the nutritional information for it, but it's pretty healthy as you can see. 3 large eggs (or egg substitute) 1 cup of vegetable oil (or applesauce) 2 cups granulated sugar (or Splenda) 1 tsp vanilla extract 4 cups peeled, cored & grated tart baking apples, such as granny smith, cortland or northern spy 2 cups sifted all purpose flour 1 tsp baking soda 1/2 tsp salt 1/8 tsp ground cloves 1/2 tsp ground ginger 1/4 tsp nutmeg 1 tsp cinnamon (or use 1 tsp pumpkin pie spice and 1 tsp cinnamon) optional: 1/2 cup raisins, 3/4 cup chopped walnuts

Preheat oven to 350f. Grease or spray a 9" x 13" x 2" baking pan, or 24 muffin cups.

Beat the eggs and oil (or applesauce) in a mixing bowl until foamy. Add sugar, spices and vanilla. Beat well. Stir in the apples. Sift the dry ingredients together and add to the bowl. Stir until just moistened but do not beat (mix as little as possible).

Baking times: for cake - 45 to 55 minutes. For muffins - 25 to 35 minutes, rotating pans half way through. Or bake until golden brown. Cool on a rack before cutting cake into squares.
