This same citrus honey marinade works great for chicken thighs, shrimp or fish like cod or halibut (firm fish). Easy and quick weeknight meal (after marinading for 2-4 hours).

Pick you fruit for this marinade and garnish - lemon, orange, even grapefruit. Leave chicken in fridge to marinade before heading out to work, then easily have dinner ready in less than 30 minutes when you get home.

Ingredients:
- 4 - skinless, boneless chicken breast halves
- 1/2 cups - lemon juice OR orange juice
- 2 tablespoons - shallot finely chopped
- 1 tablespoons - honey
- 1 tablespoons - olive oil
- 1 tablespoons - snipped fresh thyme OR 1 tsp dried thyme crushed
- 2 teaspoons - snipped fresh rosemary OR 1/2 tsp dried rosemary crushed
- 1 cloves - garlic minced
- - lemon or orange wedges for garnish and serving
Directions:
1. Place chicken in a resealable bag set in a shallow dish. For marinade, stir together lemon juice, shallot, honey, olive oil, thyme, rosemary, garlic, 1/2 teaspoon salt and 1/4 teaspoon pepper. Pour over chicken; seal bag. Marinate in the refrigerator for 2 to 4 hours, turning bag occasionally.
2. Preheat broiler. Drain chicken, reserving marinade. Place chicken on the unheated rack of a broiler pan. Broil 4-5 inches from the heat for about 6 minutes or until light brown.
3. Turn chicken; brush lightly with reserved marinade. Discard any remaining marinade. Broil 6-8 minutes more or until chicken is no longer pink (170° F). Serve with lemon or orange wedges.
