Cinnamon Banana Cake

Ingredients:

  1. 1 1/2 cups - all-purpose flour
  2. 1/2 cups - sugar
  3. 2 teaspoons - baking powder
  4. 1 teaspoons - baking soda
  5. 2 teaspoons - ground cinnamon
  6. 1/2 teaspoons - salt
  7. 1 cups - low-fat vanilla yogurt
  8. 2 - ripe bananas mashed
  9. 2 tablespoons - vegetable oil
  10. 1 - egg
  11. 1 teaspoons - vanilla extract

Directions:

Preheat the oven to 400 degrees F. Coat an 8-inch square baking dish with cooking spray.

In a large bowl, combine the flour, sugar, baking powder, baking soda, cinnamon, and salt; mix well. Add the yogurt, bananas, oil, egg, and vanilla; mix until well blended, then spread into the baking dish.

Bake for 22 to 25 minutes, or until golden and a wooden toothpick inserted in the center comes out clean.

Let cool, then cut into squares.
