Chunky Spaghetti Sauce

Ingredients:

  1. 8 cups - Tomato sauce (2 qts.)
  2. 1 cans - 6-oz. Tomato paste
  3. 1/3 cups - Honey
  4. 2 teaspoons - Salt
  5. 2 tablespoons - Fresh minced garlic
  6. 1 1/2 teaspoons - Dried thyme
  7. 2 teaspoons - Dried basil*
  8. 2 teaspoons - Dried oregano
  9. 1 1/2 teaspoons - Dried or fresh rosemary
  10. 3 whole - Large bay leaves
  11. 3 tablespoons - Oil
  12. 2 whole - Medium onions Coarsley chopped
  13. 2 whole - Green bell peppers Coarsley chopped
  14. 2 whole - Zucchini Sliced lengthwise, then into quarter-inch thick half-rounds
  15. 1 pounds - Lean ground beef
  16. 1/2 pounds - Spicy pork or chicken sausage**
  17. 1 packages - 1-lb. pkg. spaghetti
  18. - Pepper, to taste
  19. - Parmesan cheese For garnish

Directions:

1. Put tomato sauce, tomato paste, honey, salt, garlic, thyme, basil, oregano, rosemary and bay leaves into a large pot or crock pot. Stir well and cook on low heat.
2. Meanwhile, heat oil in a large frying pan over medium heat and saute onion and bell pepper until onions start to caramelize. Add to sauce.
3. Briefly saute zucchini and add to sauce, or add to sauce raw.
4. Cook ground beef and sausage. Drain fat and add meat to sauce.
5. Bring to simmer and cook at least 3 hours, stirring occasionally to prevent sticking. Can be cooked overnight in crock pot.
6. Adjust salt, to taste.
7. Prepare spaghetti according to pkg. directions. Serve sauce over pasta with freshly ground black pepper and Parmesan cheese.
