Chunky Ham and Vegetable Frittata

Ingredients:

  1. 1 - onion
  2. 1 - carrot
  3. 1 - red pepper
  4. 1 - green pepper
  5. 1 - zucchini
  6. 6 ounces - ham steak
  7. 2 - eggs
  8. 4 tablespoons - chopped fresh parsley
  9. - salt and pepper
  10. - PAM cooking spray

Directions:

1. Prepare the ingredients: peel and chop the onion and carrot; deseed and dice the peppers; trim and dice the zucchini; remove all visible fat from ham steak and dice; lightly beat the eggs.

2. Mix the eggs and parsley in a bowl and season well. Pour into a pan sprayed with PAM, scatter over the vegetables and ham and cook gently for 8-10 minutes or until the bottom is set and golden.

3. Place the pan under the broiler for 2-3 minutes to brown the top.
