Chorizo Quiche

Ingredients:

  1. 6 ounces - chorizo, sausage, chicken sausage, or protein of your choice
  2. 6 - eggs
  3. 1 - ripe avocado peeled, seeded, chopped
  4. 1 packages - frozen chopped spinach thawed, drained
  5. 1/4 cups - onion chopped
  6. 2 tablespoons - oregano
  7. 1/4 cups - chopped cilantro
  8. 4 tablespoons - water
  9. 1 tablespoons - cooking fat of your choice

Directions:

In a small skillet, heat the cooking fat over medium heat. Add the onions and cook for 2-3 minutes until they begin to soften.

Add the meat and cook several minutes until browned.

Crack the eggs into a bowl; beat well with a wire whip. Add the meat, spinach, oregano, cilantro and water. Mix well.

Grease a baking dish or pie pan with some additional cooking fat. Pour in the mixture, adding the chopped avocado. Bake at 250 degrees F for 25-30 minutes.

Check on it periodically; it is done when the center is firm and a knife pushed into the center of it comes out clean.
