Notes:
An easy way to prepare the zucchini is to cut it into small chunks and then stick it in the food processor. Do not do this for long though; you are trying to create a grated texture.

Ingredients:
- 4 - Eggs
- 1 1/2 cups - Crisco Oil
- 3 cups - Sugar
- 3 cups - Grated Zucchini
- 3 cups - Pillsbury or Gold Medal Flour
- 1 1/2 teaspoons - Baking Powder
- 1 teaspoons - Baking Soda
- 1 1/2 teaspoons - Cinnamon
- 1 teaspoons - Salt
- 1/3 cups - Hershey’s European Style Cocoa
- 1 teaspoons - Vanilla
- 1 cups - Powdered Sugar Sifted
- 1 tablespoons - Milk
- 1 1/2 teaspoons - Milk
- 1 tablespoons - Butter
- 1/2 teaspoons - Vanilla
Directions:
Cake:
1. Combine dry ingredients in a separate container. Set aside
2. Beat eggs; then add oil and sugar. Beat well. Then stir in zucchini.
3. Add the dry ingredients slowly to the zucchini mixture.
4. Add vanilla
5. Put it into a greased and floured tube or bundt pan. Bake at 350 for 1 hr or until toothpick comes out clean.
Glaze:
1. Combine the melted butter, milk, and vanilla in a container.
2. Gradually add powdered sugar.
3. Adjust thickness of glaze with milk if necessary.
4. Pour over the cake after it has cooled.
