Chocolate Chocolate Chip Muffins

Ingredients:

  1. 1 3/4 cups - all-purpose flour
  2. 2 teaspoons - baking powder
  3. 1/2 teaspoons - baking soda
  4. 2 tablespoons - cocoa powder
  5. 3/4 cups - sugar
  6. 3/4 cups - semisweet chocolate chips plus extra for sprinkling on top
  7. 1 1/4 cups - milk
  8. 7 tablespoons - vegetable oil
  9. 1 - egg
  10. 1 teaspoons - pure vanilla extract
  11. 2 - scoops of chocolate protein powder optional
  12. - muffin liners optional

Directions:

Preheat the oven to 400 degrees F.

Place the flour, baking powder, baking soda, cocoa, sugar, and chocolate chips into a large bowl.

Pour all the liquid ingredients into a separate bowl; mix the dry and wet ingredients together just until mixed together, not too much mixing since lumpy batter makes the best muffins.

Spoon into prepared (greased or lined with muffin papers) muffin tins.

Sprinkle 1/4 cup chocolate chips over top of batter. Bake for 20 minutes or until the muffins are dark, risen and springy.
