Ingredients:
- 4 cups - old-fashioned oats
- 1/2 cups - shredded unsweetened coconut
- 1/2 cups - mini semi-sweet chocolate pieces
- 1/2 cups - dried cherries finely chopped
- 1/4 cups - whole wheat flour
- 1/4 teaspoons - kosher salt
- 1/2 cups - canola oil
- 1/2 cups - honey
- 1 teaspoons - vanilla extract
Directions:
1. Preheat oven to 325 degrees F. Line a 13x9x2-inch baking pan with parchment paper; set aside.
2. Combine the first six ingredients in a large bowl. In a small bowl, whisk together the remaining three ingredients. Pour the wet mixture over the oat mixture and stir until combined.
3. Press combined mixture into prepared baking pan. Bake for 40 minutes or until golden brown.
4. Allow to cool completely, then cut into sixteen 4-1/2 by 1-1/2 inch bars. Store any leftovers in an airtight container for up to 3 days.
