Chocolate Cake with Strawberries and Whipped Cream Filling

Ingredients:

  1. 1 boxes - chocolate cake mix prepared
  2. 2 cups - sliced strawberries plus additional for garnish
  3. 1 1/2 cups - heavy whipping cream
  4. 1/4 cups - sugar to taste
  5. 1 teaspoons - vanilla
  6. 1/2 cups - heavy whipping cream
  7. 2 cups - chocolate chips

Directions:

Mix together the cake mix as directed on package, and bake in two 9-inch round cake pans (about 25 minutes). Allow to cool completely.

While cakes cool, mix together whipping cream, by beating together the whipping cream, sugar, and vanilla in a bowl or mixer on medium-high speed until stiff peaks begin to form.

For chocolate ganache, in a small bowl pour whipping cream over chocolate chips and heat in microwave for 75 seconds, then at 30 second intervals, until cream is warm enough to melt chocolate chips; stir after each cooking until mixture is creamy and smooth. Allow to cool for 5-10 minutes before drizzling over cake.

To assemble cake, place on round cake layer on cake plate; top with whipping cream, followed by sliced strawberries. Place remaining cake layer on top of strawberries. Spread ganache over top and allow to drip over sides. Garnish top with whole or sliced strawberries, as desired. Refrigerate until ready to serve, and store any leftovers in refrigerator.
