Choco-Mint Snaps

Ingredients:

  1. 1 cups - semi-sweet chocolate chips
  2. 1 3/4 cups - flour
  3. 2 teaspoons - baking soda
  4. 1 teaspoons - cinnamon
  5. 1/4 teaspoons - salt
  6. 2/3 cups - vegetable shortening
  7. 1/2 cups - sugar plus more for rolling
  8. 1 - egg
  9. 1/4 cups - light corn syrup
  10. 1/4 teaspoons - peppermint extract
  11. - white chocolate for dipping
  12. - red and white peppermint candies crushed, for dipping

Directions:

Preheat oven to 350 degrees F. Melt chocolate chips. Remove from heat and set aside.

Sift together flour, baking soda, cinnamon and salt; set aside.

In large bowl, cream together shortening with sugar and egg; beat until creamy. Mix in corn syrup, peppermint extract and melted chocolate. Blend in dry ingredients.

Shape into balls, roll in sugar, and place on ungreased cookie sheet. Bake for 10 to 12 minutes.

When cool, dip halfway in melted white chocolate and sprinkle with crushed peppermint candies.
