Chinese Chicken Salad

Ingredients:

  1. 1 - Barbecued or roasted chicken
  2. 6 3/4 ounces - Maifun (rice sticks) 1/2 package
  3. 1 heads - Lettuce sliced
  4. 3 - Green onions chopped; 3-4
  5. 3 tablespoons - Toasted almonds slivered
  6. 2 tablespoons - Toasted sesame seeds
  7. 2 1/2 tablespoons - Soy sauce
  8. 2 tablespoons - Hoisin sauce
  9. 1 tablespoons - Water
  10. 1 tablespoons - Dry mustard
  11. 1/2 teaspoons - Salt
  12. 1/4 teaspoons - Pepper

Directions:

1. Shred chicken (after removing bones) and set aside.
2. Deep-fry maifun, a handful at a time; drain on paper towel and set aside.
3. Combine dressing ingredients in a jar and shake well.
4. Combine chicken, lettuce, onion, almonds and sesame seeds in a salad bowl.

Just before serving, add the maifun and the dressing and toss gently to mix.
