    Sometimes I use leftover homemade chili for this as well. Another fun idea is to top the potatoes with taco meat and beans and add some lettuce to the mix.

  1. 4 - large potatoes
  2. 1 cans - chili
  3. 1 cups - cheddar cheese grated
  4. - butter, sour cream, chives optional


Wash potatoes thoroughly, prick with fork several times. Roll potatoes in olive oil or butter, and then roll in sea salt. Bake in 400 degree oven for about 45 minutes or until tender. (Or put the potatoes on a plate in the microwave for 4-6 minutes until cooked through).
Heat up chili while potatoes are baking.
Serve potatoes with chili, butter, sour cream, cheese, and chives, if desired.
