Chiles Rellenos Quiche

  1. 2 cans - 4 oz. diced green chiles drained
  2. 2 cups - shredded sharp cheddar cheese
  3. 1 cups - shredded Monterey Jack cheese with peppers
  4. 2 cups - milk
  5. 1 cups - Bisquick original all-purpose baking mix
  6. 4 - large eggs slightly beaten
  7. 1 cups - Ricotta cheese
  8. - cooking spray


1. Preheat oven to 350 degrees F. Coat a 12-x-8-x-2 inch baking dish with cooking spray.

2. Sprinkle green chiles, cheddar cheese and Monterey Jack cheese evenly into baking dish.

3. Beat milk, baking mix and eggs at low speed with an electric mixer until smooth. Stir in ricotta cheese; spoon mixture evenly over chiles and cheese in baking dish.

4. Bake, uncovered, at 350 degrees for 45 minutes or until a knife inserted in center comes out clean. Let stand 10 minutes before cutting.
