Ingredients:
- 1 tablespoons - butter
- 1 cups - long-grain white rice
- 2 cups - chicken broth
- 11 ounces - corn with red and green bell peppers 1 can; drained
- 4 ounces - mild chopped green chiles 1 can
- 1 teaspoons - taco seasoning mix
- 2 tablespoons - fresh cilantro chopped
Directions:
1) in a large saucepan, melt butter over medium heat. Add rice; cook, stirring frequently, for 2 minutes.
2) Add broth, corn, chiles, and seasoning mix; bring to a boil. Cover, and reduce heat to medium-low. Cook until liquid is absorbed, 15-20 minutes.
3) Remove from heat; let stand, covered, for 5 minutes. Add cilantro; fluff with a fork.
