Ingredients:
- 2 - Carrots Chopped
- 1 - Bell pepper Chopped
- 1 1/2 cups - Greek yogurt
- 2 cans - Chickpeas Rinsed and drained
- 1 1/2 teaspoons - Curry Powder
- 1/2 teaspoons - Garlic powder
- 4 cups - Brown or white rice
Directions:
1. Chop bell pepper and carrots.
2. Toss chopped veggies, can of drained chickpeas, and a cup of greek yogurt in a large pan or pot.
3. Stir in curry and garlic powder.
4. Cook until soft.
5. Serve over rice
