Chickpea Curry Over Rice

Ingredients:

  1. 2 - Carrots Chopped
  2. 1 - Bell pepper Chopped
  3. 1 1/2 cups - Greek yogurt
  4. 2 cans - Chickpeas Rinsed and drained
  5. 1 1/2 teaspoons - Curry Powder
  6. 1/2 teaspoons - Garlic powder
  7. 4 cups - Brown or white rice

Directions:

1. Chop bell pepper and carrots.
2. Toss chopped veggies, can of drained chickpeas, and a cup of greek yogurt in a large pan or pot.
3. Stir in curry and garlic powder.
4. Cook until soft.
5. Serve over rice
