    I prefer to cook my bacon first a little bit, in the dish, for about 7 min on Broil. Also, about 10 min before it is done, I move the chicken a little with a spoon to help the liquid fall down a little more into the rice and allow the chicken to lightly brown. **The picture shown is a doubled recipe in a large pyrex dish with only 3 chicken breasts - so basically I'm doubling all of it but the chicken - it feeds my family of 9 just with smaller meat portions**

Ingredients:

  1. 1/2 packages - Bacon
  2. 3 - Chicken Breasts (butterflied and cut in smaller pieces)
  3. 1 packages - Uncle Ben's Original Long Grain & Wild Rice
  4. 1 cans - Cr of Mushroom Soup
  5. 1 cans - Evaporated Milk
  6. - Salt & Pepper to taste

Directions:

Heat oven to 350°. Line 9x13 dish with uncooked bacon slices. Pour uncooked rice on top. Shake the seasoning packet from the box of rice and evenly sprinkle over rice.
Arrange chicken on top. Salt and pepper as desired. Mix milk and soup in separate bowl, then pour over all. COVER and bake for 1 hour. Remove foil and bake an additional 30 minutes. Very good! (see notes for tips)
