Ingredients:
- 6 - chicken breast halves or any chicken pieces
- 1 - medium sweet onion diced
- 1 cloves - garlic minced
- 1/4 cups - diced red bell pepper or roasted red pepper
- 1 tablespoons - olive oil
- 2 tablespoons - butter
- 2 tablespoons - flour
- 1 1/2 cups - milk
- 1/2 teaspoons - salt
- 1 dashes - pepper
- 1 cups - Havarti cheese shredded or diced
- - basil optional
- 1 jars - pimento optional
Directions:
Heat oven to 350 degrees. Grease a 9x13-inch baking pan or pan large enough to hold the chicken in a single layer. Wash chicken and pat dry. Place in prepared dish.
Combine the onion, garlic, bell pepper and olive oil. Top each chicken breast with the onion mixture and bake for 20 minutes.
Meanwhile, in a saucepan over medium low heat, melt butter. Stir in flour until smooth. Add milk, salt and pepper. Cook, stirring constantly, until thickened. Stir in cheese and continue stirring until cheese is melted. Spoon hot cheese sauce over the chicken and cook for 15-20 minutes longer, or until chicken is cooked through.
Juices will run clear when chicken is pierced with a fork.
