Ingredients:
- 2 cups - cooked chicken chopped
- 16 ounces - refrigerated cheese tortellini such as Buitoni
- 30 ounces - spaghetti sauce
- 1 cups - beef broth
- 1/4 teaspoons - garlic powder or garlic salt
- - shredded mozzarella cheese for topping before serving
Directions:
If you don't have any cooked chicken on hand, place a couple of chicken pieces (skinless, boneless, breast or thigh or tenderloin) into a skillet with a little olive oil; season chicken with salt, pepper, Italian seasoning and a little garlic, if desired. Allow to cook until cooked through, about 6-10 minutes, depending on thickness of pieces; remove from skillet and chop.
In a large bowl, stir together the spaghetti sauce, beef broth, and garlic powder. Stir in the cheese tortellini, followed by the chicken pieces, and mix well.
Pour mixture into a 2-quart casserole dish and cover the dish with a lid or aluminum foil. Bake at 350 degrees F for 45 minutes.
Remove from oven, stir gently; top with mozzarella and allow to sit for 3-5 minutes to allow cheese to melt before serving.
