Wild Rice & Chicken Casserole

Ingredients:

  1. 1 packages - Wild Rice
  2. 1 1/2 pounds - Boneless chicken Cubed
  3. 1 cups - Presliced Mushrooms Minced
  4. 1/2 teaspoons - Garlic Minced
  5. 1 cans - Cream of Mushroom Soup
  6. 3/4 cups - Sour Cream
  7. 1/4 cups - Water Chestnuts Minced
  8. 1/4 teaspoons - Pepper
  9. 1 packages - Ritz Crackers Crushed
  10. 1/4 cups - Butter Melted

Directions:

Cook rice according to package instructions. Set aside.
Heat pan over medium-high heat & coat with cooking spray.
Sauté chicken, mushrooms & garlic about 6 minutes or until chicken cooked.
Combine wild rice, chicken mix, mushroom soup, sour cream, water chestnuts & pepper.
Stir well and spoon mixture into greased casserole dish.*

Preheat oven to 350 degrees.
Combine crackers, melted butter and stir well. Sprinkle topping over chicken casserole.
Bake for 35 minutes or until bubbly.

*You can cover casserole & refrigerate overnight. Next day uncover the casserole & let sit until room temp while mixing topping.
