This recipe makes such a large portion; make the whole recipe and then divide into two baking dishes. Freeze one for another meal, and bake the one for tonight. Or make ahead for a large group, keep refrigerated, and then cook in time for gathering.

Ingredients:
- 4 whole - Celery Ribs chopped
- 16 ounces - Sliced Water Chestnuts
- 5 cups - Cooked Chicken diced
- 4 cups - Cheddar Cheese grated
- 2 cans - Cream of Mushroom Soup
- 16 ounces - Sour Cream
- 1 cups - low-fat Milk
- 1/2 teaspoons - Salt
- 1/2 teaspoons - Pepper
- 1 boxes - Long Grain Wild Rice (fast cooking)
- 1/4 cups - Butter or Margarine
- 2 whole - Medium Onions chopped
Directions:
Prepare rice according to package directions; set aside. Melt butter; add onion, celery, and water chestnuts. Saute until tender. Stir in rice, chicken, 3 cups cheese, and remaining ingredients (except last cup of cheese).
Spoon into lightly greased 15x10-inch pan. Bake at 350 for 30 minutes. Sprinkle with remaining cheese and bake for 5 minutes more.
