Ingredients:

  1. 4 whole - Celery Ribs chopped
  2. 16 ounces - Sliced Water Chestnuts
  3. 5 cups - Cooked Chicken diced
  4. 4 cups - Cheddar Cheese grated
  5. 2 cans - Cream of Mushroom Soup
  6. 16 ounces - Sour Cream
  7. 1 cups - low-fat Milk
  8. 1/2 teaspoons - Salt
  9. 1/2 teaspoons - Pepper
  10. 1 boxes - Long Grain Wild Rice (fast cooking)
  11. 1/4 cups - Butter or Margarine
  12. 2 whole - Medium Onions chopped

Directions:

Prepare rice according to package directions; set aside. Melt butter; add onion, celery, and water chestnuts. Saute until tender. Stir in rice, chicken, 3 cups cheese, and remaining ingredients (except last cup of cheese).

Spoon into lightly greased 15x10-inch pan. Bake at 350 for 30 minutes. Sprinkle with remaining cheese and bake for 5 minutes more.
