Chicken Tortilla Soup

Ingredients:

  1. 3 - boneless, skinless chicken breasts
  2. 1 - onion chopped
  3. 2 cloves - garlic chopped
  4. 2 tablespoons - cumin
  5. 2 teaspoons - cilantro (or 1 tbsp fresh)
  6. 1 - bay leaf
  7. 1 tablespoons - chili powder
  8. 4 - corn tortilla 4-6
  9. 6 ounces - canned tomato paste
  10. 6 ounces - water
  11. 1 cups - picante sauce
  12. 1 - red bell pepper chopped
  13. 1 - bell pepper chopped
  14. 16 ounces - frozen corn
  15. - salt to taste

Directions:

Cook chicken, onion, and garlic in water to cover until chicken is done. Remove chicken; cut in small pieces. Add remaining ingredients. Bring to a boil; simmer for 30 minutes or more. Add 4 to 6 tortillas, cut or torn in pieces. When ready to serve, garnish with any or all of these: shredded Monterey Jack cheese, cubed avocado, or crushed Fritos.
