I'll usually double this recipe. I'll make tacos the first night with the first half and then freeze the second half and make taquitos the following week. I'll usually make up a quick pico de gallo and guacamole to go with them.

Ingredients:
- 1 pounds - Boneless skinless chicken breasts
- cups - Water as needed
- cubes - Chicken bouillon cubes as needed
- 1 tablespoons - Vegetable Oil
- 1 teaspoons - Minced garlic
- 1/2 cups - Minced green onions
- 1 cups - Finely chopped tomatoes
- 6 tablespoons - Reserved chicken broth
- 2 teaspoons - Flour
- 1/2 teaspoons - Cumin
- 1/2 teaspoons - Oregano
- 1/2 teaspoons - Chili powder
- 1/2 teaspoons - Salt (to taste really, start on the low end)
Directions:
Put chicken in a 10" skillet. Add water by the cupful keeping count of how many cups of water you use
until the chicken is covered. Add one chicken bouillon cube per cup of water added, plus one extra cube. Simmer covered 20 to 25 minutes until the chicken is done (165 degrees). Remove chicken from the broth, reserving 6 T of broth for future use. Once the chicken has cooled, shred the chicken.
Sauté onion and garlic in 1 T oil 1-2 minutes. Stir in chicken, tomatoes, reserved chicken broth, flour, cumin, chili powder, and salt to taste. Simmer 3-5 minutes.
