You can serve this with rice, couscous, or spaghetti. My family likes to put it in a flour tortilla and eat as a taco. I like to wrap it in a lettuce leaf and dip in hot sauce.

Ingredients:
- 4 - chicken breasts
- - fat-free chicken broth
- - green, red, and orange peppers
- - green onions
- - lemon pepper
- - mushrooms
- - cilantro
- - garlic powder
- - tomatoes
Directions:
Boil the chicken breasts until really tender and keep the broth for later.
Chop up peppers, onions, cilantro, tomatoes and mushrooms; put in a pan and add some broth. Add your spices.
Take the chicken and break up into pieces and add to vegetables. Let cook for about 20 minutes.
