Chicken Stroganoff with Yogurt

Ingredients:

  1. 2 pounds - boneless, skinless chicken breast cut in 1-inch cubes
  2. 1 tablespoons - margarine from soybean oil
  3. 1 tablespoons - olive oil
  4. 1 tablespoons - flour
  5. 1 tablespoons - paprika
  6. 2 cups - plain yogurt
  7. 1/2 pounds - mushrooms sliced
  8. 1 tablespoons - fresh lemon juice
  9. 2 tablespoons - fresh parsley chopped
  10. - cooked egg noodles tossed with caraway seeds for serving with

Directions:

Season chicken with salt and pepper. In a large pan, melt margarine, add olive oil and saute chicken until browned. Remove chicken to shallow baking dish.

To pan, add flour and paprika to pan juices and cook, stirring one minute. Stir in yogurt and mix well. Spoon over chicken.

Saute mushrooms in pan sprayed with cooking spray. Add lemon juice and cook 1 minute. Spoon over chicken pieces.

Bake in preheated 325 degrees F oven for about 20 minutes. Garnish with chopped parsley.

Serve with egg noodles tossed with caraway seeds.
