Chicken Sausage Chilie

Ingredients:

  1. 1 pounds - ground chicken sausage spicy if possible
  2. 1 - yellow onion
  3. dashes - sea salt and pepper
  4. 1 teaspoons - cumin
  5. 4 cloves - garlic
  6. 14 1/2 ounces - fresh tomatoes, diced if you're in a hurry, canned tomatoes work well
  7. 4 - zucchini, cut into chunks
  8. 2 tablespoons - bacon fat

Directions:

1. In a large skillet, add bacon fat and heat over medium. Once, heated add chicken sausage and break up with spatula and salt and pepper to taste.
2. Once chicken is almost cooked through, add onions, garlic, tomatoes, and cumin.
3. Cover skillet and turn heat down to med-low and let simmer for 25 minutes stirring occasionally.
4. Add zucchini and cover and cook for an additional 10 minutes.
