Chicken Rice Pilaf

Ingredients:

  1. 1 whole - Chicken
  2. 1/2 whole - Onion Finely chopped
  3. 1/2 sticks - Butter
  4. 1 boxes - 5-oz. Box fideo or vermicelli
  5. 1/2 teaspoons - Cinnamon
  6. - Black pepper, to taste
  7. 2 1/2 cups - Chicken broth (reserved from cooking chicken)
  8. 1 cups - Rice

Directions:

1. Boil chicken. When done, remove chicken, reserving broth. Debone and shred or chop chicken, discarding skin and bones. Set aside.
2. Saute onion in butter until transparent. Remove onion; add vermicelli and saute. Add cinnamon, black pepper and broth. Bring to boil.
3. Add rice, onion and chicken to taste, reserving remainder of chicken for another use if all is not used. (Generally about 1/2 of the chicken is used.) Turn heat to low and cook about 25 min.
