Chicken Rice Medley

Ingredients:

  1. 2 pounds - cooked chicken
  2. 18 ounces - chicken broth
  3. 1 cups - White Rice, long grain
  4. 1 cups - Carrots
  5. 1 cups - Onion
  6. 1/2 teaspoons - Gumbo seasoning
  7. 1 cups - Snow Peas
  8. 1/2 teaspoons - Salt

Directions:

Bone chicken and break into pieces. In a Dutch oven or large heavy saucepan, place chicken broth, rice, carrot slices, onion, and gumbo seasonings. Bring to a boil over high temperature. Stir, cover, and reduce heat to low. Cook 25 minutes.

Add chicken and peas, stirring well. Cover and cook about 7 minutes more until peas are done.
