How To Fold Them: Spoon filling onto the bottom of a long strip of layered phyllo. Fold the short edge of the strip to meet the long edge, forming a triangle. Continue to fold, as you would a flag. When you reach the end of the strip, you'll have a neat triangle.

Ingredients:
- - Cooking spray
- 1 tablespoons - olive oil
- 1/2 cups - finely chopped mushrooms
- 1/2 cups - finely chopped onions
- 1/2 cups - finely chopped carrots
- 1/2 cups - finely chopped celery
- 2 cups - low-sodium chicken broth
- 1 teaspoons - poultry seasoning
- 1/2 cups - frozen peas
- 1 cups - chopped, cooked skinless chicken breast
- 6 tablespoons - fat-free cream cheese
- 8 ounces - frozen phyllo dough, thawed
- 4 teaspoons - cornstarch
- 1/4 cups - grated Parmesan
Directions:
1. Heat oven to 375 degrees F. Spray a baking sheet with cooking spray; set aside.
2. Heat oil in a large skillet over medium heat. Add mushrooms, onions, carrots and celery and cook until soft and beginning to brown, about 8 min. Add 1 cup chicken broth and poultry seasoning and simmer until reduced, 6 to 8 min. Stir in peas, chicken and 4 tbsp cream cheese; stir until cream cheese has melted, about 2 min. Remove from heat.
3. Stack 3 phyllo sheets, with the long edge facing you, on a clean work surface and spray with cooking spray (cover remaining phyllo with plastic wrap to prevent drying). Cut phyllo into 3 vertical strips, each measuring 4 1/2 inches wide. Spoon about 2 tbsp of the chicken filling onto each strip and fold into triangular packages. Repeat process five more times with remaining phyllo, cooking spray and filling. Place triangles on prepared baking sheet and coat with cooking spray. Bake until golden, 18 to 20 min.
4. Meanwhile, prepare gravy: In a medium saucepan whisk together cornstarch and remaining 1 cup chicken broth. Cook and stir until thickened and bubbly, about 5 min. Continue stirring for 2 min more. Whisk in Parmesan and remaining 2 tbsp cream cheese until melted. Serve turnovers with gravy.
