Chicken Piccata

Ingredients:

  1. 4 - chicken breasts boneless, skinless
  2. 1/2 cups - flour
  3. - salt & pepper to taste
  4. 4 - eggs beaten
  5. 2 tablespoons - parmesan cheese freshly grated
  6. 1/2 cups - butter
  7. 1 tablespoons - capers
  8. 1 - lemon cut in wedges
  9. - angel hair pasta cooked

Directions:

In a small bowl, mix flour, salt and pepper. In a second small bowl, combine eggs and parmesan cheese. Dredge chicken in flour mixture, then dip into egg mixture.

Heat butter in large skillet. Saute chicken on both sides until crisp and brown. (Chicken is done when juices run clear). Remove chicken, top with capers and lemon wedges.

Serve over angel hair pasta.
