    Ingredients: 2 Tbsp olive oil 3 large carrots, peeled and sliced thin 1 medium vidalia onion, diced 64-96 oz. chicken broth 2 bay leaves 1/2 tsp thyme 1/2 tsp oregano 1/2 tsp parsley 12 oz. wide egg noodles 1 rotisserie chicken, deboned, pulled into small pieces Salt and pepper to taste

Sauté onion and carrots in olive oil over medium heat for about 10 minutes. In large pot, add sautéed vegetables to 64 oz. of chicken broth. Add bay leaves, thyme, oregano, and parsley. Bring to a boil. Boil for about 5 minutes, until carrots are soft. Add egg noodles, cook for about 10 minutes. Add chicken to soup. Cook until noodles are soft. Add more chicken broth as needed. Salt and pepper to taste.
