Chicken Kiev

Ingredients:

  1. 1/2 cups - butter
  2. 1 cloves - garlic crushed
  3. 2 teaspoons - snipped chives
  4. 2 teaspoons - snipped parsley
  5. 1 teaspoons - salt
  6. 1/2 teaspoons - crumbled rosemary
  7. 1/8 teaspoons - pepper
  8. 1 - egg slightly beaten
  9. 1 tablespoons - water
  10. 4 - boneless chicken breasts
  11. - salad oil for frying
  12. 1/4 cups - flour

Directions:

In small bowl combine butter, garlic, chives, parsley, salt, rosemary and pepper. Blend well. Lay on waxed paper and pat to 3/4-inch thick. Roll, wrap and freeze.

Blend egg and water well. Flatten chicken breasts with rolling pin to 1/4-inch thickness. Cut frozen butter mixture into 4 equal parts and lay one piece on each chicken breast. Roll up in chicken breast and secure with skewers.

Heat salad oil in skillet. Dip chicken rolls in flour, then in egg mixture, then flour, and fry until golden, turning occasionally.

Drain on paper towels. Place in casserole to keep warm. Serve hot.
