Chicken Kiev

Ingredients:

  1. 8 whole - Boned chicken breats Skinned and split in half
  2. 1/2 pounds - Oleo
  3. 4 tablespoons - Chives or scallions Minced
  4. 4 tablespoons - Parsley Minced
  5. 2 teaspoons - Lemon juice
  6. 2 whole - Eggs
  7. 2 tablespoons - Water
  8. 1 cups - Seasoned bread crumbs

Directions:

1. Pound breast until 1/8-in. thick, avoiding letting the meat split.

2. Cut oleo in half and then into 16 pieces. Place a pat of oleo on each breast near one end. Sprinkle w/ chives (scallions), parsley and lemon juice. Fold over sides and roll up breast, being sure to enclose margarine completely. Fasten w/ toothpicks. Refrigerate.

3. Beat eggs and water together. Dip each breast in egg mixture and then into the bread crumbs.

4. Bake in ungreased shallow pan, seam side up at 450 for 20 min. or until well-browned. After first 10 min., baste w/ the oleo that has oozed from the chicken.
