Ingredients:
- 1/2 cups - vegetable oil
- 3 cups - chopped onions
- 1 cups - chopped red bell pepper
- - garlic chopped finely
- - Cajun seasoning
- 1 pounds - smoked sausage (prefer jalapeno beef sausage) cut up
- 1 1/2 pounds - boneless chicken breast cut up
- 4 cups - chicken broth
- 1 cups - white wine
- 1 cups - water
- 3 cups - medium grain rice
- - chopped green onions optional
- - saltine crackers if desired
Directions:
Heat oil in a Dutch oven. Add onions, red peppers, garlic, Cajun seasoning, stirring often until vegetables are caramelized.
Add sausage and chicken, and cook until chicken is done.
Add rice and stir together. Stir in chicken broth, white wine and water.
Cover and place in a 350 degree F oven for about an hour (checking it periodically and when all water is gone, it is ready).
Serve with chopped green onions and saltine crackers.
